Serves 6 people
6 ramekins – greased with butter or sunflower oil
80ml Orange juice
zest of 1 orange
80g golden caster sugar
4 large free-range egg whites / 6 medium free-range egg whites
20g Goan cinnamon
20g unsweetened cocoa powder
First, boil the orange juice and sugar for 3-4 mins until it becomes syrupy. Add the cinnamon, orange zest and cocoa powder to this and stir in carefully until fully incorporated.
Next, beat the egg whites into soft peaks and gently, gradually add the syrup folding in with a metal spoon.
Divide this mixture between the greased ramekins and bake at 150 oC for 12 minutes.
Serve straight away with 2 generous scoops of vanilla icecream, or Alpro soya chocolate mousse in separate ramekins on the side.
This is especially a lovely, comforting and winter-warming dessert; but it is also great to make at anytime of year. Enjoy!
