A quick and easy sponge cake recipe – but with a goantolondon twist.
Pre-heat the oven to 180 oC.
Measure out into a cake mixing bowl:
100g caster sugar
50g sunflower oil
Combine these together. Next add:
100g self-raising flour
Combine in gently with a metal spoon.
Finally, add 2 medium free-range eggs.
Transfer the mix to a pre-greased 8cm diameter springform cake tin, or a normal cake tin will also do.
Cook for 45mins to 1hr, or until a skewer comes out clean.
Leave to cool for two minutes before running a knife around the cake, releasing it and resting it on a cake rack to cool.
