Gran Luchito is a new salsita made from rare Mexican chillies. It is described as paste but as you can see from the picture it is more like a thick chilli oil. Most people seem to associate chilli sauces with just one word- hot, hotter, hottest. But actually I think Gran Luchito will be a revelation to people who are used to one dimensional hot sauces. Yes there is heat but it’s is subtle and there are other things in the salsita to build up an more complex, rounded flavour profile including sweetness from balsamic vinegar and agave nectar, garlic and spices. And of course the chillies are the star of the show. The have a lovely earthy flavour from being smoked over an oak fire and are ground slowly using traditional methods. I really loved the flavour of these chillies, they reminded me a bit of dried Kashmiri chillies. I used the salsita to make a killer steak sandwich, the salsita works great swirled into anything cool and creamy, I blended mine with some mayo. Gran Luchito is the first product in this range, the next one is just called Luchito and will have a more sauce like texture, where the chilies have been blended with pineapple.
